Today, we are staying in Ethiopia, but moving east to the famous region of Sidama. From the village of Bombe, this naturally processed Ethiopian is sweet, smooth, and intensely fruity. Produced by more than 375 smallholders, the coffee was sorted and slowly dried at the local washing station, capturing the unique character of the Sidama terroir.
Naturally dried in the whole cherry – following generations of tradition – Bombe offers superb character that offer a beautiful contrast to the Honey process you enjoyed yesterday. The velvety profile offers an array of sweet fruit, with notes of strawberry, pineapple, and nectarine.
